(For the milk I used homemade milk (made with soaked walnuts and pumpkins seeds) but you can use any combination of nut/seed milk you like. Store-bought coconut milk also goes very well with this recipe.)
1 cup Nut Milk
3-4 tbsp soaked Chia Seeds (soaked for 2- 3 hours)
1 tbsp shredded Coconut (optional)
1 mashed Banana
2-3 tbsp Coconut Sugar
1 pinch Nutmeg
1 pinch Saffron
1 Pinch Cinnamon
Fruits for garnish
Place the soaked chia seeds in a bowl.
Add all the ingredients listed above and incorporate well to form a pudding consistency by slowly adding nut milk into the bowl.
Tastes best chilled. Garnish with fruits. Yummy!!
Per Ayurveda, chia seeds are tridoshic – balance all our three doshas – vata, pitta, and kapha. They are also considered “sattvic” as they promote calmness and equanimity.

Tryptophan is the amino acid the body uses to make the feel-good and relaxation neurotransmitter serotonin. So, this pudding not only satisfies my sweet gooey craving but, as an added bonus, slumbers me into dreamland!!
