Ingredients:

Diced okra – 2 cups
Cumin seeds – 1 tsp
Finely chopped green chilies (optional) – ½ tsp
Tumeric powder – ½ tsp flat
Coriander powder – 1 tsp flat
Salt – to taste
Sesame oil – 2 tbsp

Directions:

Cut the okra in ½” pieces and keep aside.
Heat the oil in a wok or a deep pan. Add cumin seeds and fenugreek seed and fry till brown. Add cut Okra & quickly mix with heated oil.

Add ½ teaspoon of turmeric powder, 1 & 1/2 teaspoon coriander powder, mango, crushed green chili, and 1 teaspoon sea salt.

Toss all together by stirring, cover for 5 minutes. Then keep open and cook on medium heat for 7 to 10 minutes, tossing every 2-3 minutes.

Now add salt, garam masala and cook till okra is tender and roasted with stirring occasionally. Serve hot.
